The past couple of days, after lunch, my blood sugar spiked and crashed. Sure enough: my blood sugar was higher than I expected. An apple has a glycemic index of 36-40, but a glycemic load of 6.

Another reason to avoids white rice: my blood sugar dropped pretty rapidly. Not to unsafe levels but definitely had an impact.

Note to self: sushi is bad for my blood sugar. Stick to sashimi.
